Pizza Stuffed Chicken

How many ways can you stuff a chicken? I’m on the way to figuring it out! Like I’ve said before, the possibilities are endless with stuffed chicken recipes. You can make it your own with using any veggie, sauce & cheese. Enjoy the creative process of making it yours. Just like toppings on a pizza, there are many options. I love salami & peppers on my pizza. You can use pepperoni, sausage or just veggies & cheese too! I’d love to see your creations. Reach out to me or tag me if you do make it. It would make me so happy! Happy Tuesday guys 🙂

Pizza Stuffed Chicken (serves 3)

3 chicken breasts

1 tbsp of olive oil

1 tbsp of garlic herb seasoning

1 jar of McCormick Italian Herb grinder

1 tsp of paprika seasoning

1 jar of Raos Homemade Marinara

1 jar of Mezzetta sliced banana peppers

1 package of Applegate uncured genoa salami

1-2 cups of Organic Valley shredded mozzarella

Set oven to 375 & drizzle 1 tbsp of olive oil on glass bakeware pan (2 quart)

Slice chicken breasts down the side (creating a little pocket).

Rub 1tbsp of olive oil over chicken breasts.

Sprinkle/ rub in garlic herb seasoning + paprika all over chicken. Then set on baking sheet.

Spoon 1 tsp of marinara in each chicken breast. Then stuff with salami, cheese & banana peppers. Measurements are up to you on the stuffing, but try not to overstuff so it doesn’t come out during the baking process.

Pour in 1/2 jar of marinara into pan, going around the chicken. Then spoon a little bit of marinara over the chicken. Cover baking sheet with aluminum foil.

Place pan in oven & bake for 30 minutes.

During the last 5 minutes, take pan out of the oven & remove aluminum foil.

Sprinkle the shredded cheese on top of the chicken breasts & grind some Italian herbs.

Then place back into oven for 5 minutes (uncovered).

Enjoy with a salad or on it’s own. Very filling!

My family enjoyed this recipe. We were out of banana peppers so we substituted chopped olives. I was told this recipe is a “do again”. Love to find new recipes my family likes.
