Cajun Stuffed Chicken with Crawfish

I love love stuffed recipes. They’re just way more fun in my eyes. My original plan for this one was to stuff the chicken with boudin (a pork & dirty rice stuffed sausage). I couldn’t find any here in Vegas, so I improvised by using a garlic chicken sausage. It still turned out so flavorful & tender! I’m still on a hunt for boudin to hopefully make this recipe again soon. You can make it with any sausage you like or the boudin. Recipe below!

Ingredients:

4 large chicken breasts

2 sausage links (or 2 boudin sausages)

3 tbsp dairy free cream cheese (or regular)

1 cup of shredded cheddar

3 tbsp Cajun seasoning

2 tbsp olive oil

1 tbsp old bay seasoning

2 tbsp Kinders buttery garlic seasoning (or any garlic)

1 tbsp minced garlic

1 package of thawed crawfish tails

2 tbsp butter

1 cup dairy free milk (or regular)

1 cup seafood stock

Instructions:

Lightly grease baking sheet

Preheat oven to 375

Rinse chicken breasts

Slice chicken down the side to create a pocket

Season chicken with 1tbsp olive oil, 2tbsp Kinders buttery garlic & 1tbsp Cajun seasoning

Take casing off sausages (or boudin) & dice into small pieces

In a bowl mix sausage, cream cheese & cheddar

Place chicken on baking sheet

Stuff chicken breasts with sausage mixture

Cover with foil & bake in at 375 for 35min

In a skillet on medium heat, add 2tbsp butter and 1tbsp minced garlic

Add in crawfish tails, 1tbsp old bay and cook for about 3 minutes (stirring frequently)

Stir in seafood stock, milk, 1 tbsp butter, 1 tbsp Cajun seasoning

Let simmer on low heat for 5 minutes

Top chicken with creamy crawfish

Jambalaya with Cauliflower Gnocchi

If you’re looking to spice things up in the kitchen, then this Jambalaya pasta is for you! Spice level can be adjusted to your liking. I like mine right in the middle so I can still taste the other flavors.

In my opinion, this is my BEST cauliflower gnocchi recipe. So if you want to give it a go, this is the ONE to try. It is dairy free, gluten free & low carb. Make sure to tag me if you make it. It brings me pure joy to see people enjoying my recipes 🙂

Recipe (3-4 servings)

Ingredients:

3/4 onion

3/4 bell pepper

2 Italian spicy chicken sausage links

10 raw colossal shrimp, peeled & deveined (or any size)

1 bag of frozen Trader Joe’s cauliflower gnocchi

2 cups of Nut Pods original creamer

2tbsp dairy free cream cheese

1tbsp old bay seasoning

2tbsp minced garlic

1tbsp lemon herb seasoning

1tbsp Cajun seasoning

1tbsp crushed red pepper

1tbsp Louisiana hot sauce

3tbsp tomato paste

1tbsp butter

2tbsp olive oil

Prep:

Dice 3/4 of an onion & 3/4 of a bell pepper

Thinly slice 3 Italian chicken sausages (Trader Joe’s)

Bring cauliflower gnocchi to a bowl & drizzle 1tbsp olive oil & sprinkle 1tbsp lemon herb seasoning

Sauce:

In a food processor blend 2 cups @nutpods original creamer, 2tbsp dairy free cream cheese, 3tbsp tomato paste, 1tbsp minced garlic, 1tbsp old bay, 1tbsp Louisiana hot sauce

Cook:

In a skillet on medium heat add 2tbsp olive oil, onions, bell peppers, 1tbsp Cajun seasoning & chicken sausage

Stir continuously until sausages start charring a bit, then take skillet off heat

Bring frozen gnocchi to a bowl, drizzle 1tbsp olive oil & sprinkle 1tbsp lemon herb seasoning

Place gnocchi in air fryer at 370 for 10min

In a separate skillet on medium high heat add 1tbsp organic butter, 1tbsp minced garlic & shrimp

Stir continuously & sauté until shrimps turn pink

Place shrimp in skillet that sausages are in (will be combining everything soon)

In shrimp skillet, stir in sauce & let simmer on med low heat for 2 minutes

Then add in shrimp, sausage, onions, bell peppers & gnocchi

Mix it all together & simmer for 2 more minutes

Top with red pepper

Parmesan is optional


Cajun and Garlic Stuffed Chicken

{Recipe for 4 chicken breasts}

Slice rinsed chicken breasts down the side to create a pocket

Add them to a bowl & rub 1tbsp of olive oil over chicken

Evenly coat chicken with 2tbsp of roasted garlic & 2tbsp of Cajun seasoning

Place seasoned chicken breast on a lightly greased baking sheet

Bring 1/2 cup of diced (small) bella mushrooms, 1 cup of diced (small) broccoli florets, 1tbsp garlic, 1-2 cups of cheddar jack cheese & 1/2 cup of cream cheese together in a bowl (mix well to create “stuffing”)

Stuff your chicken breasts

Cover baking sheet with aluminum foil

Bake in oven at 375 for 30min

Take out of oven & add more cheese (optional)

Crisp up in the air fryer at 320 for 5 minutes (optional)
