Jambalaya with Cauliflower Gnocchi

If you’re looking to spice things up in the kitchen, then this Jambalaya pasta is for you! Spice level can be adjusted to your liking. I like mine right in the middle so I can still taste the other flavors.

In my opinion, this is my BEST cauliflower gnocchi recipe. So if you want to give it a go, this is the ONE to try. It is dairy free, gluten free & low carb. Make sure to tag me if you make it. It brings me pure joy to see people enjoying my recipes 🙂

Recipe (3-4 servings)

Ingredients:

3/4 onion

3/4 bell pepper

2 Italian spicy chicken sausage links

10 raw colossal shrimp, peeled & deveined (or any size)

1 bag of frozen Trader Joe’s cauliflower gnocchi

2 cups of Nut Pods original creamer

2tbsp dairy free cream cheese

1tbsp old bay seasoning

2tbsp minced garlic

1tbsp lemon herb seasoning

1tbsp Cajun seasoning

1tbsp crushed red pepper

1tbsp Louisiana hot sauce

3tbsp tomato paste

1tbsp butter

2tbsp olive oil

Prep:

Dice 3/4 of an onion & 3/4 of a bell pepper

Thinly slice 3 Italian chicken sausages (Trader Joe’s)

Bring cauliflower gnocchi to a bowl & drizzle 1tbsp olive oil & sprinkle 1tbsp lemon herb seasoning

Sauce:

In a food processor blend 2 cups @nutpods original creamer, 2tbsp dairy free cream cheese, 3tbsp tomato paste, 1tbsp minced garlic, 1tbsp old bay, 1tbsp Louisiana hot sauce

Cook:

In a skillet on medium heat add 2tbsp olive oil, onions, bell peppers, 1tbsp Cajun seasoning & chicken sausage

Stir continuously until sausages start charring a bit, then take skillet off heat

Bring frozen gnocchi to a bowl, drizzle 1tbsp olive oil & sprinkle 1tbsp lemon herb seasoning

Place gnocchi in air fryer at 370 for 10min

In a separate skillet on medium high heat add 1tbsp organic butter, 1tbsp minced garlic & shrimp

Stir continuously & sauté until shrimps turn pink

Place shrimp in skillet that sausages are in (will be combining everything soon)

In shrimp skillet, stir in sauce & let simmer on med low heat for 2 minutes

Then add in shrimp, sausage, onions, bell peppers & gnocchi

Mix it all together & simmer for 2 more minutes

Top with red pepper

Parmesan is optional


{viral} Baked Feta Pasta recipe, using Boursin cheese

If you haven’t tried the {viral} feta pasta recipe that has been circling TikTok, here is your sign. Do it! This recipe originated from talented food blogger Jenni Häyrinen, Leimessa. Her recipe was such a big hit in Finland, they ran out of feta cheese. Seeing they were out of feta at my local Trader Joe’s, I wasn’t all that surprised. Standing there in the cheese aisle, I googled “creamy cheese that melts” lol. Boursin, brie and goat cheese came up as options. When I saw they had garlic herb Boursin cheese, I was sold. You put garlic as a flavor on anything & I’m going to pick it. I love GARLIC! So glad I went with the Boursin because it had such delicious flavor & perfect creamy texture for pasta. Win Win!

I used bow tie pasta noodles and tossed in buttery shrimp at the end. Shrimp Queen here. It was AMAZING. Best part? It was so easy to make. My daughters and I really loved it. Below is how I made it:

In a baking dish, I added mini heirloom tomatoes

Drizzled 2tbsp olive oil over them & sprinkled 1tsp Himalayan salt

Placed the garlic herb Boursin cheese in the middle of the baking dish

Drizzled 1tbsp olive oil over the cheese & sprinkled 1tbsp crushed red pepper on cheese as well

Tossed in a generous amount of minced garlic over the heirlooms (I used 2 tbsp)

Baked in the oven uncovered, at 400 for 20min

While it baked, I started the boil for my pasta & cooked the shrimp

Boiled bow tie pasta al dente (can use any pasta shape you like)

In a skillet on med high heat, I added 2tbsp organic butter & 1tbsp garlic

Tossed in raw colossal shrimps, stirring & flipping until they turned pink (light squeeze of lemon at the end)

Once the baking was done, I stirred the creamy cheese and tomatoes together, using my spoon to blend it well

Then stirred in the bow tie pasta, 2 tbsp of cut up basil leaves and buttery shrimp

Shrimp Fried Rice & Everything Nice

Hey friends! I wanted to bring my favorite rice recipe to the blog 🙂

I’m obsessed with this rice. Ever since I made it the first time, I can’t stop making it for my Family. It is flavorful & extremely versatile, which is great for our weekly rotation of dinners. You can make it with any protein & veggie you like. I love using spam or chicken, but shrimp is my favorite. Here’s a simple & flavorful recipe for you. Let me know if you make it 🙂

Bring skillet to med high heat

Add 1tbsp of organic butter, 1tbsp minced garlic & raw shrimp

Stir continuously & once they turn pink, set in a bowl to the side

Add 1tbsp of olive oil to same skillet with 1tbsp garlic, 2tbsp of Bachan’s Japanese sauce (or any Teriyaki sauce), onions, bell peppers, peas, carrots & mushrooms

Stir in 1tbsp of water to help cook the veggies

Sauté veggies for 3-4min, then stir in cooked jasmine rice, shrimp, & 2 egg scramble

Turn down heat, add 1tbsp olive oil & another tbsp of Japanese sauce (Teriyaki)

For spice, stir in 1-2tbsp red chili garlic sauce

Bring off heat, then top with cilantro & green onions
